One Pan Roasted Mushrooms and Halloumi
A quick and flavorful recipe that celebrates simple Mediterranean ingredients. Halloumi cheese, juicy mushrooms, and sweet cherry tomatoes roast together, creating a delicious base for a weeknight dinner. Pair with warm bread or grains and finish with tahini or nuts for extra texture.
10.5 oz chestnut mushrooms
9 oz cherry tomatoes
1 small red onion
3 cloves garlic
1 tsp ground cumin
1 tbsp balsamic vinegar
8 oz halloumi cheese
1 lemon
1 handful chopped lacinato kale
2-3 tbsp fresh chopped cilantro
olive oil
Directions:
1. Heat oven to 400F. Add mushrooms, tomatoes, and onions into pan, coat with oil, garlic, cumin, and balsamic.
2. Roast for 20 minutes.
3. Mix tahini, lemon juice, honey, and cumin with water to make drizzle (optional).
4. Add halloumi, lemon zest, kale, and more oil if dry. Roast for 10 minutes.
5. Finish with lemon juice and toppings, serve immediately.
