- 4 cups rhubarb, chopped
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 9-inch unbaked pie crust
- 1/2 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/4 cup cold butter
Directions:
1. Preheat oven to 400°F (200°C).
2. In a large bowl, combine rhubarb, granulated sugar, 1/4 cup flour, cinnamon, and salt. Pour into the pie crust.
3. In a separate bowl, mix 1/2 cup flour and brown sugar. Cut in the butter until the mixture resembles coarse crumbs.
4. Sprinkle the crumb mixture over the rhubarb filling.
5. Bake in the preheated oven for 35-40 minutes or until the topping is golden brown and the filling is bubbly.
