Saladmaster Gourmet Skillet Tips: Potstickers & Perogies
COOKING DIRECTIONS
1. Preheat skillet on medium heat. Skillet is preheated once water beads dance in skillet.
2. Add oil or butter to coat bottom of the skillet. (approximately 2-3 teaspoons)
3. Place frozen perogies and/or dumplings in skillet to brown for 6 minutes
4. Pour 1/4 cup of hot water into skillet and cover.
5. When pan clicks, reduce heat to low. Cook for 15-20 minutes, or until water evaporates. If there's excess water, increase heat to medium and let cook uncovered until water evaporates.
Top pierogies with sliced scallions and bacon bits, or crumbled pieces of smoky corn chips.
Serve potstickers with dipping sauce made from soy sauce, balsamic vinegar, minced ginger and minced garlic.

Additional Tip: Using frozen vegetables instead of the wet paper towel allows you to cook two things at once without dirtying up a second pan. Remember to turn the temperature down to low after the Vapo-Valve™ clicks for an additional 15 minutes or less, depending on how soft you like your eggs.

There are many potential customers that request a non-meat (vegan) meal and I’ve made delicious changes to accommodate this, and it’s been easy! I simply substituted the fried chicken with a wonderful vegetable stir fry that has been enthusiastically received by my vegan customers.
Most standard American Saladmaster demonstration meals include 3 vegetables cooked in the 11” Large Skillet, potatoes cooked in the 3 Qt. Sauce Pan with Steamer inset, fried chicken in the Electric Oil Core Skillet, a cake in the Small Skillet, and, of course, the Saladmaster salad.
The plant-based alternative to the Saladmaster demonstration dinner is even easier and faster than our typical dinner. All that is needed to adjust is to replace the fried chicken with a vegetable stir fry medley and veggie meatballs (see recipe below). Add one or two more vegetables to the new 11" Deep Dish Skillet and you’re good to go.
Recipe:
Simply place a package of veggie meatballs into Electric Skillet. Pour two large bags of frozen oriental blend vegetables over the veggie meatball; add about 1/3 to ½ of a 12-ounce bottle of sweet and sour sauce; cover and set the temperature probe to RIC1 or RIC2 (this is the automatic rice setting for the Electric Skillet, but it also works great on most casseroles and lasagnas). Your dish will be ready in about 30 minutes. The temperature probe automatically raises the heat and gradually lowers to cook perfectly.
If you are using a stove top skillet in lieu of the Electric Skillet, place food in skillet, cover and place skillet over medium heat. When Vapo-Valve™ clicks reduce heat to low and cook for 20 - 25 minutes. Combine meal with the potatoes with onions, five vegetables cooked in the Deep Dish Skillet, a veggie salad and veggie cake. This meal knocks it out of the park and is easy.

I was curious about meat substitutes that can aid transitions to a more vegetable based diet and as I started exploring choices in the store I found many meat alternatives, such as: veggie meatballs, griller crumblers (ground beef alternative), chic patties, veggie patties, vegetarian buffalo wings, vegetarian sausage patties, vegetarian sausage Links, vegetarian bacon strips, black bean and veggie burgers.

Saladmaster Frequently Asked Questions
Can I put Saladmaster cookware in the dishwasher?
Yes, but only without the Versa Loc™ Handles. After time, however, repeated washing in the dishwasher may dull the cover knob. We recommend that you avoid the heat-dry cycle of the dishwasher by using the energy-efficient air-dry cycle.
After I've lowered the heat and the seal has formed, can I lift the lid?
Saladmaster's unique vapor-seal lids create a semi-vacuum, which shortens cooking time and helps keep food warm long after the heat is turned off. However, peek if you must. After replacing the lid, spin it so that the Vapo-Valve™ clicks, indicating that it has resealed itself. If it does not, increase the heat until the Vapo-Valve™ clicks, then reduce the heat to low.
What if my range cooks at a higher temperature than normal?
If your lowest temperature is too high, you may need to purchase a heat-reducing pad for your burner, such as the type used under glass coffee pots on electric ranges.
Saladmaster's cookware construction is designed for use on all stoves including induction. Because Saladmaster is so efficient with induction heating, it doesn't take long for the pan to heat up as with gas or electric stoves.
Can I ever cook over high heat?
High heat may cause warping. Also, foods are more likely to stick or scorch over high heat, and cooking at a too high heat can cause foods to shrink and become dry. It is okay, however, to bring large amounts of liquid to a boil, such as water for pasta, over medium-high heat. Reduce heat after the boiling point has been reached.
Can I carve a roast in the pan?
Never use sharp utensils to cut foods in the pan to avoid damaging the finish. Remove foods to a cutting board.
Why does the Vapo-Valve™ click as soon as I turn the heat on under a covered pan? Should I lower the heat at that time?
The Vapo-Valve™ is designed to click when the food or liquid inside the pan reaches approximately 187°F/86°C. Occasionally, slow clicking begins before the pan has been exposed to heat long enough to reach that level. When that happens, proceed as you would without the premature click. The click should stop as the heat rises. Once the temperature hits approximately 187°F/86°C, the Vapo-Valve™ will click again. This time, the click will be more rapid and insistent, and it is time to reduce the heat to low.
