βœ… Ingredients (Makes about 4 waffles):
1 cup cottage cheese (full-fat or low-fat)
2 large eggs
1/4 cup milk (any kind: whole, almond, oat, etc.)
1 cup rolled oats (or oat flour)
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon (optional, for flavor)
1 tsp vanilla extract
1 tbsp honey or maple syrup (optional for sweetness)
Butter or oil for greasing the waffle iron
πŸ₯£ Instructions:
Blend the batter:
In a blender or food processor, combine:
1 cup cottage cheese
2 eggs
1/4 cup milk
1 cup rolled oats
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1 tsp vanilla extract
1 tbsp honey (optional)
Blend until completely smooth (about 30–45 seconds). Batter should be pourable but thick.
Preheat waffle iron:
Lightly grease with butter or oil and preheat according to your waffle iron’s instructions.
Cook waffles:
Pour about 1/2 cup of batter into the center of the waffle iron (adjust for your model).
Close the lid and cook for 3–5 minutes, or until golden brown and crisp on the outside.
Serve immediately:
Top with:
Fresh berries or banana slices
A dollop of Greek yogurt or more cottage cheese
Drizzle of honey or maple syrup
Chopped nuts or nut butter for crunch
🍽️ Tips:
Want them crispier? Let them cool on a wire rack so they don’t steam.
Make it savory: Omit the honey, cinnamon, and vanilla. Add herbs, scallions, or shredded cheese instead.
These freeze well! Reheat in a toaster or oven.
