Garlic Herb Roasted Vegetables

Ingredients:
1 lb baby potatoes (red or gold), halved
1 cup baby carrots (or sliced regular carrots)
1 cup fresh green beans, trimmed
2 tbsp olive oil
3 cloves garlic, minced
1 tsp dried Italian seasoning
½ tsp smoked paprika
½ tsp salt
½ tsp black pepper
Directions:
Preheat Oven:
Preheat your oven to 400°F (200°C). Get a baking sheet ready.
Prepare the Veggies:
Wash and cut the baby potatoes in half. If using regular carrots, slice them up.
Trim the ends of the fresh green beans.
In a bowl, mix the veggies with olive oil, minced garlic, Italian seasoning, smoked paprika, salt, and black pepper until well coated.
Roast the Veggies:
Spread the seasoned veggies on the baking sheet in a single layer.
Roast in the preheated oven for about 25-30 minutes, or until the veggies are tender and caramelized.
Serve:
Once roasted, transfer the veggies to a serving dish. Enjoy
