Bacon BBQ Brisket Quesadilla Avalanche with Stretchy Cheese Blast

Ingredients:

– 1 lb cooked brisket, shredded
– 6 slices of bacon, cooked and crumbled
– 1 cup BBQ sauce
– 4 large flour tortillas
– 2 cups shredded cheddar cheese
– 1 cup shredded mozzarella cheese
– 1/2 cup diced red onion
– 1/4 cup chopped fresh cilantro
– 1/4 cup diced jalapenos
– 1/4 cup sour cream
– 1/4 cup guacamole

Instructions:

Preheat a large skillet over medium heat. In a large bowl, toss the shredded brisket with the BBQ sauce until well coated. Place one tortilla in the skillet and sprinkle with a quarter of the cheddar cheese. Top with a quarter of the brisket mixture, crumbled bacon, red onion, cilantro, jalapenos, and half of the mozzarella cheese. Place another tortilla on top. Cook for 2-3 minutes, until the bottom tortilla is golden brown and the cheese is starting to melt. Carefully flip the quesadilla and cook for another 2-3 minutes on the other side. Repeat with the remaining ingredients to make three more quesadillas. Cut each quesadilla into quarters and serve with sour cream and guacamole. Enjoy the gooey, cheesy, bacon BBQ brisket goodness!
