Irish Lamb & Cabbage Soup

A traditional Irish soup perfect for warming up on St. Patrick’s Day.

Ingredients:
• 1 lb lamb (cubed)
• 1 tbsp olive oil
• 1 onion #2 cone
• 2 carrots #4 cone
• 2 cups cabbage (chopped)
• 4 cups beef or vegetable broth
• 1 bay leaf
• ½ tsp thyme
• ½ tsp salt & pepper
Instructions:
1. Heat olive oil in the 5 Qt Mulit-Purpose and sear lamb until browned. Remove and set aside.
2. In the same pot, sauté onions and carrots for 3 minutes.
3. Add cabbage, broth, bay leaf, thyme, salt, and pepper.
4. Return lamb to the pot, cover, turn to medium heat once clicking, turn to low and cook for 1 hour.
5. Remove bay leaf and serve hot!
