Sweet Potato & Black Bean Chili

Ingredients:
• 1 sweet potato #3 cone
• 1 can black beans (drained & rinsed)
• 1 can diced tomatoes (14 oz)
• 1 onion #2 cone
• 2 cloves garlic #2 cone
• 1 tsp chili powder
• ½ tsp cumin
• 2 cups vegetable broth
• Salt & pepper to taste
Instructions:
1. Heat the 4qt Mezzo over medium heat and sauté onions and garlic.
2. Add sweet potatoes, chili powder, and cumin, stirring for 2 minutes.
3. Stir in black beans, diced tomatoes, and vegetable broth.
4. Cover, turn to medium, once clicking turn to low for 15 minutes, until sweet potatoes are tender.
5. Season with salt and pepper, then serve warm!
