Mediterranean Quinoa Bowl

Ingredients:
• 1 1/2 cups quinoa (rinsed)
• 2 cups vegetable broth
• 1 cup cherry tomatoes (halved)
• ½ cucumber (diced)
• ¼ cup feta cheese (crumbled)
• 2 tbsp olive oil
• 1 lemon (juiced)
• ½ tsp salt & pepper
Instructions:
1. In your SaladMaster 5 Qt. (4.7L) Multi-Purpose Oil Core with Cover, add quinoa and vegetable broth. Cover, turn to medium, once clicking turn to low for 10 minutes.
2. Once cooked, remove from heat and let cool slightly.
3. Toss quinoa with cherry tomatoes, cucumber, feta cheese, olive oil, lemon juice, salt, and pepper.
4. Serve warm or chilled for a refreshing meal!
