Delicious Stuffed Chicken Breast
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- ½ cup cream cheese, softened
- ½ cup sun-dried tomatoes, finely chopped
- 1 garlic clove, minced
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 2 tablespoons olive oil
- ½ cup shredded mozzarella cheese
- Fresh basil, for garnish
Directions:
1. Preheat your oven to 375°F (190°C).
2. In a mixing bowl, combine the chopped spinach, cream cheese, sun-dried tomatoes, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
3. Place the chicken breasts on a cutting board. Using a sharp knife, carefully create a pocket in each chicken breast by slicing horizontally without cutting all the way through.
4. Stuff each chicken breast with the prepared mixture, dividing it evenly among them. Secure the openings with toothpicks if necessary.
5. In an oven-safe skillet, heat the olive oil over medium-high heat. Add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.
6. Sprinkle the shredded mozzarella cheese on top of the chicken breasts. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and no longer pink in the center.
7. Remove from the oven and let the chicken rest for a few minutes before serving. Garnish with fresh basil.
