Keto Bacon Cheeseburger Meatloaf

1 pound ground beef (80/20)
1/2 cup shredded cheddar cheese
1/2 cup cooked and crumbled bacon (about 6 slices)
1/4 cup almond flour
1/4 cup sugar-free ketchup
2 large eggs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika

1/4 cup diced pickles (optional)


Preheat the oven to 350°F. In a large mixing bowl, combine the ground beef, cheddar cheese, crumbled bacon, almond flour, ketchup, eggs, garlic powder, onion powder, Worcestershire sauce, salt, black pepper, smoked paprika, and diced pickles if using. Mix until well combined.
Transfer the meat mixture to a loaf pan and shape it into a loaf. Spread a thin layer of sugar-free ketchup on top for added flavor and moisture.
Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 160°F. Let the meatloaf rest for 10 minutes before slicing
