2 cups riced cauliflower (fresh or frozen)
1 cup shredded cheddar cheese
1 cup sour cream
1/2 cup cream cheese, softened
1/2 cup diced green onions
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup cooked and crumbled bacon (optional)
1/2 cup shredded mozzarella cheese (for topping)
Preheat the oven to 350°F. In a large mixing bowl, combine the riced cauliflower, cheddar cheese, sour cream, cream cheese, green onions, garlic powder, onion powder, salt, and black pepper. Mix until well combined. If using, fold in the cooked bacon. Transfer the mixture to a greased 9×9-inch baking dish, spreading it evenly. Top with shredded mozzarella cheese. Bake for 25-30 minutes, or until the casserole is bubbly and the cheese is golden brown. Allow to cool for 5 minutes before serving.
