Apple Cinnamon Cottage Cheese Breakfast Cookies

These soft-baked breakfast cookies pack warm cinnamon spice, bits of sweet apple, and protein-rich cottage cheese for a cozy morning bite you can grab on the go.
Ingredients:
1/2 cup cottage cheese
1/4 cup honey or maple syrup
1 egg
1 tsp vanilla extract
1 cup quick oats
1/4 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup finely chopped apple (peeled)
Optional: 1/4 cup chopped walnuts or raisins
Instructions:
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
2. Blend cottage cheese, honey, egg, and vanilla until smooth.
3. Stir in oats, flour, baking soda, cinnamon, and salt.
4. Fold in chopped apple and optional add-ins.
5. Scoop dough onto the baking sheet and slightly flatten.
6. Bake 10–12 minutes until golden and set.
7. Cool and store in an airtight container.
