Chicken, Spinach, and Mushroom Low-Carb Oven Dish

Ingredients:

1 lb boneless, skinless chicken breasts, cut into chunks
2 cups fresh spinach
1 cup sliced mushrooms
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 cup heavy cream
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper, to taste

Instructions:

Preheat Oven:
Preheat oven to 375°F (190°C).
Sauté Veggies: In a skillet over medium heat, heat olive oil. Sauté garlic, mushrooms, and spinach until mushrooms are tender and spinach is wilted.
Assemble Dish: In a greased baking dish, layer chicken chunks, sautéed vegetables, and cheeses. Pour heavy cream evenly over the top.
Bake: Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10–15 minutes, until chicken is cooked through and cheese is golden.
Serve:
Let rest for a few minutes before serving warm.
