Creamy Cheddar and Bacon Mississippi Mud Potatoes

Ingredients:

6 cups potatoes, peeled and diced
1 cup cheddar cheese, shredded
3/4 cup mayonnaise
1 cup bacon, cooked and crumbled
3 teaspoons garlic, minced
1/2 cup onion, chopped

Directions:

Preheat the oven to 350°F (175°C).
Boil the potatoes in salted water until tender, about 15 minutes. Drain and return the potatoes to the pot.
Mash the potatoes until smooth and stir in the mayonnaise, shredded cheddar cheese, minced garlic, and chopped onion. Mix well.
Add the crumbled bacon and stir until combined. Season with salt and pepper to taste.
Transfer the mixture to a greased baking dish and smooth the top with a spatula.
Bake for 20-25 minutes or until the top is golden and the dish is heated through.
Garnish with extra crumbled bacon and a sprinkle of cheddar cheese before serving.
