Baking in the Saladmaster Electric Oil Core Skillet

When baking a boxed cake or brownies in the Saladmaster Electric Oil Core Skillet follow these instructions: 

Utensil: Saladmaster 12 in. Electric Oil Core Skillet

  1. Follow the ingredient and mixing instructions on the box.
  2. Preheat skillet, with the cover on, to 250°F/120°C.
  3. Place batter in skillet, cover, and raise heat to 300°F/150°C.
  4. Set digital probe timer to cook for the specified time on the box, using the time for the 9 in. pan size on the box.
  5. When time has elapsed, allow to cool approximately one hour in the skillet. Run knife around edge of cake to loosen from skillet, if needed.
  6. Invert cake onto platter for serving. Ice or decorate cake as desired.

Tips:

  • When removing the cover after the cooling period, immediately turn the cover over, upside down, so the moisture that has accumulated on the inside of the cover does not drip onto the cake.
  • Spray the pan lightly with a cooking oil spray just prior to placing batter into skillet or cut parchment paper to fit the bottom of the skillet; it will allow the cake to be easily removed.
  • If you do not set the timer, simply unplug the skillet after the proper cooking time and allow to cool approximately one hour.  
  • These instructions can be followed for any type of box cake mix (e.g. chocolate, white, carrot cake).

Flaxseed may be used as a fat substitute in most recipes. Generally, 3 tbsp. milled flaxseed can replace 1 tbsp. fat or oil. 

An easy way to get more flaxseed in your diet is to grind the seeds in a spice or coffee grinder and add the ground meal to muffins, breads, or other baked goods.

Additionally, 1 tbsp. milled flax plus 3 tbsp. of water can replace 1 egg.  Adjust as needed for your recipe.

Apples are probably the single most popular fruit eaten out of hand, because they are so convenient to tote for lunches and snacks.  But, apples are equally good in salads, baked goods, and meat and vegetable dishes.  Cooked apples go nicely with chicken, pork, or veal and with vegetables such as cabbage, onions or potatoes.

Stovetop Baked Apples:  Wash, quarter and core enough apples to fill sauce pan at least 3/4 full.  Cover; cook over medium heat until Vapo-Valve™ clicks, reduce heat to low and cook about 15 minutes, until apples are tender.  Although Rome apples are the best choice, virtually any apple may be used.

A unique, simple way to capture potatoes' true taste and nutrition: 

Cut 4 potatoes in half, cut a "cross" into cut side of each potato; wipe dry with paper towel.  Place cut side down in dry 11-inch skillet.  Cover; cook over medium heat until Vapo-Valve™ clicks, reduce heat to low and cook 30 minutes.  Using fork, fluff insides and top as desired.

Topping suggestions:  Fat-free or reduced fat sour cream; grated fat-free Cheddar, mozzarella or Monterey Jack cheese; fat-free cottage cheese; sliced scallions; salsa, chow-chow or chutney; chopped green chilies; low-fat chili; spaghetti sauce and grated Parmesan cheese;  sautéed mushrooms; cooked chopped broccoli in low-fat cheese sauce.
