High-Protein Chocolate Cottage Cheese Ice Cream

 Ingredients

2 cups cottage cheese
1/4 cup honey or maple syrup
1/4 cup unsweetened cocoa powder
2 tablespoons peanut butter
1 teaspoon vanilla extract
Pinch of salt
1/4 cup dark chocolate chips or chopped dark chocolate (optional mix-in)

Instructions

In a food processor or high-powered blender, combine cottage cheese, honey, cocoa powder, peanut butter, vanilla, and salt. Blend until the mixture is extremely smooth and creamy, scraping down the sides as needed. There should be no lumps remaining from the cottage cheese.
Taste the mixture and add a bit more honey if you prefer a sweeter ice cream. Blend again to mix.
If using chocolate chips or chunks, fold them into the ice cream mixture with a spatula.
Transfer the mixture into a loaf pan or freezer-safe container. Smooth the top and cover the container tightly with a lid or plastic wrap.
Freeze for at least 4 hours (or overnight) until solid.
When ready to serve, let the container sit at room temperature for about 5 minutes to soften slightly, then scoop with an ice cream scoop into bowls. Enjoy this guilt-free, protein-packed chocolate ice cream cold from the freezer.
