Chive and Bacon Mashed Potato Croquettes 


500g (1.1 lbs) mashed potatoes (prepared with butter and cream)
150g (5 oz) cooked bacon, finely chopped
3 tablespoons fresh chives, finely chopped
100g (1 cup) shredded cheddar cheese
2 large eggs, beaten
100g (1 cup) panko breadcrumbs
Salt and pepper to taste
Olive oil or vegetable oil (for frying)

These croquettes are crispy outside and stuffed with creamy mashed potato, smoky bacon, and fresh chives—pure comfort in every bite! 


Freeze uncooked croquettes for up to 2 months; fry from frozen, adding a couple of extra minutes.
Serve with sour cream or your favorite dipping sauce for a tasty appetizer or side.
