Chive and Bacon Mashed Potato Croquettes 🥔🥓🌿

Ingredients:
500g (1.1 lbs) mashed potatoes (prepared with butter and cream)
150g (5 oz) cooked bacon, finely chopped
3 tablespoons fresh chives, finely chopped
100g (1 cup) shredded cheddar cheese
2 large eggs, beaten
100g (1 cup) panko breadcrumbs
Salt and pepper to taste
Olive oil or vegetable oil (for frying)
Instructions:
1️⃣ In a large bowl, mix mashed potatoes, chopped bacon, chives, and shredded cheddar cheese; season with salt and pepper.
2️⃣ Shape the mixture into small, bite-sized cylinders or balls.
3️⃣ Dip each croquette into the beaten eggs, then coat thoroughly with panko breadcrumbs.
4️⃣ Heat oil in a skillet over medium heat and fry croquettes in batches, turning occasionally, until golden brown and crispy (about 3–4 minutes per side).
5️⃣ Drain on paper towels and serve warm.
Notes:
These croquettes are crispy outside and stuffed with creamy mashed potato, smoky bacon, and fresh chives—pure comfort in every bite! 🥔🥓🌿
Freeze uncooked croquettes for up to 2 months; fry from frozen, adding a couple of extra minutes.
