Keto Crustless Coconut Custard Pie

Ingredients:
4 large eggs
1 cup coconut milk
1/2 cup granulated erythritol (or preferred sweetener)
1 cup unsweetened shredded coconut
1 tsp vanilla extract
1/4 tsp salt
1/4 tsp baking powder
Directions:
1. Preheat your oven to 350°F (175°C).
2. In a mixing bowl, whisk together the eggs, coconut milk, erythritol, vanilla extract, and salt until well combined.
3. Stir in the shredded coconut and baking powder until mixed.
4. Pour the mixture into a greased pie dish.
5. Bake for 30-35 minutes or until set and lightly golden on top.
