Keto Reuben Skillet
1 pound ground beef
1 cup sauerkraut, drained and rinsed
1 cup shredded Swiss cheese
1/2 cup diced onion
1/2 cup diced green bell pepper
1/4 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Chopped fresh parsley for garnish (optional)
1. In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula. Drain excess fat if necessary.
2. Add the diced onion and green bell pepper to the skillet. Sauté for about 5 minutes until the vegetables are softened.
3. Stir in the sauerkraut, mayonnaise, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix well to combine.
4. Reduce the heat to low and sprinkle the shredded Swiss cheese evenly over the top. Cover the skillet and let it cook for about 5 minutes, or until the cheese is melted and bubbly.
5. Remove from heat and garnish with chopped parsley if desired. Serve hot.
