Keto Skillet Pizza
Ingredients
1 cup almond flour
1 teaspoon baking powder
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
2 large eggs
1 cup shredded mozzarella cheese
1/4 cup cream cheese, softened
1/2 cup sugar-free marinara sauce
1 cup sliced pepperoni
1/2 cup sliced bell peppers (optional)
1/2 cup sliced black olives (optional)
1/2 cup shredded mozzarella cheese (for topping)
Directions
1. Preheat your oven to 400°F (200°C).
2. In a large mixing bowl, combine almond flour, baking powder, garlic powder, Italian seasoning, and salt. Mix well.
3. In a separate bowl, whisk together the eggs, cream cheese, and 1 cup of shredded mozzarella until smooth.
4. Combine the wet ingredients with the dry ingredients and mix until a dough forms.
5. Grease a 10-inch cast-iron skillet or oven-safe pan with cooking spray or olive oil.
6. Spread the dough evenly in the skillet, pressing it down to form a crust.
7. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown.
8. Remove the skillet from the oven and spread the sugar-free marinara sauce over the crust.
9. Top with sliced pepperoni, bell peppers, black olives, and the remaining shredded mozzarella cheese.
10. Return the skillet to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
11. Let it cool for a few minutes before slicing and serving.
