Rhubarb Custard Bars

You won't believe how easy these Rhubarb Custard Bars are to make! They're the perfect way to celebrate the rhubarb season!

Ingredients:
- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 1 cup milk
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 tablespoon butter, melted
Directions:
1. Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
2. In a medium bowl, toss the chopped rhubarb with 1/4 cup of sugar and set aside.
3. In a large mixing bowl, whisk together the remaining sugar, flour, milk, eggs, vanilla extract, salt, and baking powder until smooth.
4. Pour the batter into the prepared baking dish and evenly distribute the rhubarb on top.
5. Drizzle the melted butter over the rhubarb.
6. Bake for 35-40 minutes, or until the custard is set and the top is lightly golden.
7. Let cool before slicing into bars.
