Ingredients:
1 lb crabmeat
1/2 cup crushed Ritz crackers
1 large egg
1/3 cup mayonnaise
1/2 tsp Worcestershire sauce
1 tsp Old Bay seasoning
1/2 tbsp lemon juice
1 tbsp fresh parsley, chopped
6 egg roll wrappers
1/2 cup water (for sealing)
Oil (for frying)
Instructions:
1. Mix the filling: In a large bowl, combine the crabmeat, mayonnaise, crushed Ritz crackers, egg, Old Bay seasoning, Worcestershire sauce, lemon juice, and chopped parsley. Stir gently until all ingredients are well incorporated, being careful not to break up the crab too much.
2. Prepare the wrappers: Take an egg roll wrapper and lay it out on a clean, flat surface in a diamond shape. Spoon about 2-3 tablespoons of the crab mixture into the center of the wrapper.
3. Roll the egg rolls: Begin by folding the bottom corner of the wrapper over the filling. Next, fold in the sides to create a pocket, then roll the wrapper tightly from the bottom up. Brush a little water on the top corner to seal the roll securely. Repeat this process with the remaining wrappers and filling.
4. Fry the egg rolls: Heat oil in a deep skillet or fryer to 350°F (175°C). Carefully place the egg rolls into the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side until they are beautifully golden brown and crispy.
5. Drain and serve: Once cooked, remove the egg rolls from the oil and place them on paper towels to drain excess oil. Serve them warm with your favorite dipping sauce, and enjoy the crunch and flavor in every bite!
