Onion Beef Fried Rice

Ingredients:
2 cups cooked jasmine rice (preferably day-old)
1 lb beef flank steak, thinly sliced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon vegetable oil
1 onion, thinly sliced
3 cloves garlic, minced
1 cup frozen peas and carrots
2 green onions, sliced
Salt and pepper to taste
1 tablespoon sesame oil
Optional: Fried eggs for serving
Directions:
In a medium bowl, toss the sliced beef with soy sauce and oyster sauce. Let it marinate for about 15 minutes.
Heat vegetable oil in a large skillet or wok over high heat. Add the marinated beef and stir-fry for about 3-4 minutes, or until browned and cooked through. Remove the beef from the skillet and set aside.
In the same skillet, add the sliced onion and garlic, and sauté for 2-3 minutes until the onion is translucent and fragrant.
Add the frozen peas and carrots to the skillet and stir-fry for an additional 2-3 minutes until they are heated through.
Add the cooked jasmine rice to the skillet, breaking up any clumps. Pour in the sesame oil and mix everything well. Add the cooked beef back into the skillet and stir to combine. Season with salt and pepper to taste.
Continue to stir-fry everything together for another 2-3 minutes until heated through. Garnish with sliced green onions before serving.
