Bacon Onion Tomato Pie

Ingredients:
1 9-inch pie shell
5 large tomatoes, peeled and sliced
4 slices bacon, cooked and chopped
1 sweet onion, sliced or chopped
1 tsp salt
1/2 tsp pepper
2 tbsp milk
1/2 cup mayonnaise
1 1/2 cups sharp cheddar cheese, shredded
1/4 cup Ritz crackers, crushed
2 tsp butter, melted
2 green onions (scallions), sliced
Directions:
Prick the pie shell with a fork and bake at 350°F for 10 minutes.
Fry bacon until tender, then drain and set aside.
Fill the pie shell with layers of tomatoes and onions, seasoning each layer with salt and pepper.
Mix mayonnaise, bacon, cheese, and milk, then spread over the tomatoes.
Mix crushed Ritz crackers with melted butter and sprinkle on top.
Bake at 350°F for 30 minutes.
Sprinkle with scallions before serving.
