Air Fryer Hasselback Potato

Ingredients:
2 medium to large potatoes (washed but unpeeled)
2 tablespoons olive oil or melted butter
1/2 cup breadcrumbs or crushed cornflakes
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Prepare the potatoes:
Place each potato on a cutting board.
Using a sharp knife, make thin slices across the potato about 1/8 inch apart, cutting almost but not all the way through so the potato holds together.
Season:
Brush the potatoes with olive oil or melted butter, making sure it seeps between the slices.
Mix breadcrumbs with garlic powder, paprika, salt, and pepper.
Sprinkle this mixture evenly over the potatoes, pressing gently so it sticks between the slices.
Preheat air fryer:
Preheat the air fryer to 375°F (190°C).
Cook:
Place potatoes in the air fryer basket.
Air fry for 25-30 minutes until the potatoes are tender and the breadcrumbs are crispy and golden.
Serve:
Remove from the air fryer.
Garnish with fresh chopped parsley.
Serve hot as a delicious side dish.
