Colcannon (Irish Mashed Potatoes with Cabbage)

4qt. Mezzo

A creamy and comforting side dish made with mashed potatoes and sautéed cabbage.

Ingredients:
• 4 large potatoes #3 cone
• 2 cups cabbage (shredded)
• 1 cup milk
• 3 tbsp butter
• 1 green onion #2 cone
• ½ tsp salt & pepper
Instructions:
1. In 4qt Mezzo melt 1 tbsp butter and sauté cabbage until soft.
2. Add potatoes, milk, remaining butter, salt, and pepper.
3. Stir in green onions.
4. Cover turn to medium once clicking turn to low for 15 minutes.
5. Mash all together. Serve warm
