Rhubarb Custard Bars
For the crust:
- 2 cups all-purpose flour
- 3/4 cup powdered sugar
- 1 cup cold unsalted butter, cubed
For the filling:
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1 1/2 cups heavy cream
- 3 cups fresh rhubarb, chopped
For the topping (optional):
- Powdered sugar for dusting
Directions:
1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
2. In a mixing bowl, combine flour and powdered sugar for the crust. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
3. Press the mixture evenly into the bottom of the prepared baking dish.
4. Bake the crust for 15 minutes until lightly golden. Remove from oven and set aside.
5. In a large bowl, whisk together eggs, granulated sugar, flour, salt, and heavy cream until smooth.
6. Stir in the chopped rhubarb and pour the custard mixture over the baked crust.
7. Return the dish to the oven and bake for 40–45 minutes, or until the custard is set and the top is lightly golden.
8. Allow to cool completely before slicing into bars.
9. Dust with powdered sugar before serving, if desired.
