Strawberry Rhubarb Swirl
Ingredients:
- 2 cups rhubarb, chopped
- 1 cup sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 pre-made pie crust
- 1 egg (for egg wash)
Directions:
1. First, preheat your oven to 375°F (190°C).
2. In a saucepan, mix together the sliced strawberries, chopped rhubarb, sugar, cornstarch, lemon juice, and vanilla extract.
3. Cook the mixture over medium heat, stirring occasionally, until it thickens and starts bubbling. This should take about 5-7 minutes.
4. Once thickened, remove the saucepan from heat and let the fruit mixture cool down.
5. While that's cooling, roll out your pre-made pie crust and place it into a pie dish, fitting it snugly.
6. Carefully pour the cooled fruit mixture into the crust, spreading it out evenly.
7. With a spoon, gently swirl the fruit mixture to create a lovely marble effect.
8. Don't forget to brush the edges of the crust with a beaten egg to give it that beautiful golden shine while baking.
9. Pop it in the oven and bake for 20-25 minutes, or until the crust is golden brown and the filling is bubbling.
10. Once done, let it cool before serving, and enjoy your delicious creation!
