Marinated Tomato and Cucumber Salad

Ingredients:

2 large cucumbers, thinly sliced
1 large red onion, thinly sliced
3 large tomatoes, sliced or wedged
1/4 cup olive oil
1/4 cup apple cider vinegar (or red wine vinegar)
2 teaspoons sugar (optional, for sweetness)
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon garlic powder (optional)
Fresh parsley or basil for garnish (optional)

Instructions:

Slice the cucumbers, onions, and tomatoes.
In a small bowl, whisk together olive oil, vinegar, sugar (if using), salt, pepper, oregano, basil, and garlic powder (if using).
Toss the sliced vegetables in a large bowl and pour the marinade over them. Mix to coat evenly.
Cover and refrigerate for at least one hour, or overnight for the best flavor.
Before serving, stir the salad gently and garnish with fresh herbs if desired. Enjoy!
