Creamy Tomato Basil Soup

Ingredients:
• 1 can diced tomatoes (14 oz)
• 2 cups vegetable broth
• 1 onion #2 cone
• 2 cloves garlic #2 cone
• ½ cup heavy cream or coconut milk
• 1 tsp dried basil
• ½ tsp salt & pepper
Instructions:
1. In the 5 Qt Mulit-Purpose, sauté onions and garlic for 2 minutes.
2. Add diced tomatoes, vegetable broth, basil, salt, and pepper.
3. Cover, turn to medium, once clicking turn to low for 15 minutes.
4. Blend the soup until smooth using an immersion blender.
5. Stir in heavy cream or coconut milk and serve warm!
